There was once a time when I would occasionally wallow away in the shadows, contemplating my dessert-less state of existence. I didn’t have the energy to bake, I wasn’t in the mood to pick up something from the local bakery, and going solo with ice cream just wasn’t enough! On those days of yesteryear, I’d be overcome with moments of self-pity where I would ask myself why life was so cruel as to not bless me with a fast, no-stress sweet treat. No more, kids. No more.
Life has been good to me – too good even!
My luck changed when I came across the recipe for this microwave brownie-in-a-mug. The claims were lofty: a rich, decadent chocolate fix that takes little to no time to make. I was determined to try it. It is my kind of challenge. You know, the kind of challenge with the promise of an edible product to indulge in after. Risk and reward rolled into one.
Well I tried it and I love it. So I made it again. And again. And another again. And yet again. You get the picture. It was a success in chocolatey goodness. Chocoholics rejoice!
Decadence couldn’t be easier. All you do is measure, mix and microwave. This recipe calls for seven ingredients and you should already have most of them. There are only two ingredients I wouldn’t expect the average person to have in their pantry: vanilla extract and unsweetened cocoa powder. You can omit the vanilla extract. The other item deserves a note for the uninitiated.
Unsweetened cocoa powder is not to be confused with the hot chocolate mix that most people have. They are NOT to be substituted for each other. Hot chocolate mix has added sugar (along with milk and a host of other ingredients) while unsweetened cocoa powder, as the name suggests, does not. But worry not; you can get unsweetened cocoa powder in the baking aisle of ANY grocery store.
So to recap, this recipe calls for three simple steps. Measure. Mix. Microwave. What comes next is a satisfaction like no other. You can heighten this feeling by pairing the brownie with ice cream, whipped cream, fresh fruit, fruit coulis (pureed fruit), nuts, hot fudge, caramel sauce or any combination you’d like. Or you can dig in as is.
This is perfect as a surprise dessert for your hot date. I hear cooking impresses the ladies and the fellas alike. Share one brownie between the two of you and let romance ensue. It also works well as an I’m-sorry-for-being-a-jerk-earlier-today peace offering.

Ingredients
- 2 tablespoons water
- 2 tablespoons vegetable oil
- A dash salt
- Few drops vanilla extract
- 2 tablespoons unsweetened cocoa powder
- 3 tablespoons sugar
- 2 tablespoons all-purpose flour
Directions
- In a microwave-safe 12 oz coffee mug or ramekin, add water, oil, salt, and vanilla. Whisk well.
- Add cocoa powder and whisk well. Add sugar and whisk well. Add flour and whisk well.
- Microwave for 60 to 75 seconds (60 seconds for a brownie with a molten middle and bottom, and 75 seconds for uniformly done brownie). Serve and eat in mug or ramekin. Careful, brownie will be hot.
